Spinach Whole Wheat Tortilla Recipe
You’ve been looking for a tortilla recipe that’s worth your time, the mess, and that even fits your macros. THIS IS IT!!! Don’t look any further, try it, you’ll fall in love.
For those who have high quality butter, rendered lard, or tallow, you should definitely add 1/4 C of it to the dough. Adds extra nutrition and even more flexibility.
Ingredients:
1 C of fresh spinach
1 C of water
1/2 tsp salt
3 C Whole Wheat Flour
1 TBSP baking powder
1/4 C of melted Butter/Lard/Tallow (optional)
Directions:
- Blend water + spinach
- In a bowl mix flour, salt, baking powder, and butter/lard/tallow (optional).
- Add the water-spinach mix to it and mix until dough is formed. Let it sit for 10 mins.
- Roll the tortillas out and cook on a pan (cast iron works great) at medium-high heat, 30-45 seconds each side.
Some tips:
•Be generous with flour when rolling them out, it will help them not stick to each other or to the pan.
• I don’t suggest you put butter or anything on the pan, they shouldn’t stick if they have enough flour on them.
• How to store them: in a ziplock, remove the air and they’ll stay fresh and soft for a few days. You can also freeze them for later.
