Healthy Moist Banana Bread!
Who says healthy can't be heavenly? 😉
This banana bread proves them wrong! It's not just delicious, it's a breeze to make: just one bowl, a few measuring cups, and basic pantry staples. Get creative with additions like walnuts, chocolate chips, raisins, or your favorite dried fruits!

Yields one loaf
Ingredients:
• 1/3 C melted coconut oil, EVOO, high quality vegetable oil OR melted butter
• 1/2 C Honey or Maple Syrup
• 2 Eggs
• 1 C Mashed Ripe Banana (about 2 bananas)
• 1/4 C Milk or Water
• 1 tsp Baking Soda
• 1 tsp Vanilla ExtractÂ
• 1/2 tsp Salt
• 1 tsp CinnamonÂ
• 1 3/4 C Whole Wheat Flour
• 1/2 C chocolate chips, chopped walnuts, or raisins (OPTIONAL)
Directions:
• Preheat oven at 325 degrees and grease a loaf pan
• In a large bowl whisk the oil with the honey. Add eggs and beat well. Whisk in mashed bananas and milk.Â
• Add baking soda, vanilla extract, salt, and cinnamon and whisk.Â
• Finally add the whole wheat flour and mix it in with a dough hook or a spoon. If you’re adding the optional mix-ins, gently fold them in now.
• Pour the batter into the greased pan, and bake for 55 mins or until toothpick comes out clean. Let the bread cool before slicing. Enjoy!!!
