Ingredients:
• 125 g Sourdough Starter - bubbly and active
• 175 g water
• 540 g whole wheat flour
• 86 g coconut oil - melted
• 168 g honey
• 2 eggs room temp
• 1/2 tsp salt
Cinnamon Sugar Filling:
• 1/2 C softened butter
• 1 C honey or brown sugar
• 2 TBSP cinnamon
Cream Cheese Topping:
• 8 oz cream cheese
• 1/4 C butter
• 1/2 C maple syrup or honey

Instructions
-
In the bowl of a stand mixer, combine active sourdough starter, flour, honey, water, eggs, melted coconut oil, and salt. Mix together until smooth.
-
Place the dough in a greased bowl and cover with a beeswax wrap or plastic wrap.
-
First Rise: Allow to rest in warm place (around 85 degrees - like an oven with the light on) for up to 6 hs. I personally do around 4 hs.
-
Lightly dust the counter with flour, and roll out the dough into a 1/4 inch thick rectangle.
-
In a separate bowl, combine softened butter, honey, and cinnamon. Stir to combine.
-
Add butter and cinnamon-honey filling to the top of the dough and spread evenly.
-
Roll the dough up as tightly as you can.
-
Slice to make 12 even rolls.
-
Place the rolls into a lightly greased baking dish.
-
Second Rise: cover the dish with plastic wrap and place in the oven (turned off) overnight or for up to 12 hs.
-
Bake at 375 degrees for 20-25 minutes or until the rolls are lightly browned and the dough is cooked through. Allow them to cool.
Cream Cheese Topping:
• Add cream cheese, butter, maple syrup, and vanilla in a small bowl, mix until combined. Spread on top of the warm cinnamon rolls. Enjoy!!!
With much Love,
Veronica
