Whole Wheat Blueberry Scones

Easy and fun recipe!! These are made with fresh blueberries, but you can make them with frozen blueberries as well. 
This recipe yields 30 medium or 15 large scones. For reference, the picture shows the medium size scones.

Ingredients

  • 1 C cold butter cut into small pieces
  • 5 C whole wheat flour
  • 1 C coconut sugar or cane sugar
  • 4 tsp baking powder
  • 1 1/4 C milk
  • 3 eggs
  • 1.5 C washed blueberries (fresh or frozen)
  • 1 tsp salt

Directions

  • Preheat oven to 425°
  • In a large bowl, combine flour, sugar, baking powder, salt and butter thoroughly.
  • Add the eggs and milk until blended. Add the blueberries, just until moistened.
  • Knead the dough against the bowl until the dough starts sticking together.
  • Transfer dough to a floured surface and cut the dough into wedges.
  • Place each wedge on a cookie sheet lined with parchment paper 1” apart.
  • Brush each piece with milk and sprinkle with a little bit of sugar.
  • Bake 14-16 minutes or until golden brown.
  • Brush Scones with your favorite glaze- lemon glaze is my fav.
  • Enjoy!!!
