Zucchini Chocolate Cake
Drowning in zucchini? This delicious, moist chocolate zucchini bread is the perfect solution. It's an easy way to use up your harvest, and you can make it with all-purpose, whole wheat, or freshly milled flour. The best part, it is all made in ONE bowl!!!

Cook Time: 45-50 minutes
Total Time: 1hs
Ingredients:
3 C Grandview Granary Flour (AP, WW or FM)
2 tsp Baking soda
1 C Sugar
1 C Brown Sugar
1 C Unsweetened Cocoa Powder
1 1/2 C Semi Sweet Chocolate Chips
3/4 C Olive Oil
1 1/2 C Milk
2 tsp Vanilla Extract
2 C Shredded Zucchini (or more - I make it with an entire zucchini which is around 4 C)
Directions:
- Warm up the oven to 350 degrees.
- Grab one big bowl and start adding the ingredients in the order listed: Flour, baking soda, sugar, brown sugar (feel free to replace the sugar for maple syrup or honey), cocoa powder and chocolate chips.
- Incorporate them all.
- Add the oil, milk, vanilla extract and mix.
- Add the shredded zucchini and fully incorporate it all.
- Pour the batter into a 9x13 ungreased pan.
- Bake for 45-50 mins.
